Maple Syrup Cupcakes

50g pecan nuts

100g soft butter

50g soft light brown sugar

100g self raising flour

2 medium eggs

6 tbsp maple syrup

**For Butter cream**

100g soft butter

225g icing sugar

1tbsp warm water

half tea spoon vanilla essence


  • Put nuts into a plastic food bag, seal it and crush the nuts into small pieces with a rolling pin.
  • Heat oven to 190 degrees C and 375 F or gas mark 5. beat the butter and sugar into a large bowl until light and fluffy. Sift in the flour.
  • Beat the eggs in a cup and pour them into a bowl. Add nuts and maple syrup too. Stir until everything is well mixed.
  • Put paper cases into each hole in the tin. Use tea spoon to divide mixture between paper cases. Bake for 12-15 mins until raised and firm.
  • Leave cupcakes in tin for a few mins. Lift each one onto a wire rack. Leave them to cool completely.
  • For Butter cream- Put butter, icing sugar, warm water and vanilla into a bowl. Beat until smooth. Spread over each cake.
